Hand-forged in Tosa, Kochi Prefecture, under the 400-year-old jiyu-tanzo (free forging) tradition, this santoku is carried by a single smith from forging through to final sharpening. The Motokane name marks it as part of the Tosa Kurouchi series, a pro-grade line built for serious home cooks.
The Blue Steel #1 (Aogami #1) cutting edge sits within a soft-iron warikomi construction, finished in an unpolished kurouchi (black hammer-forged) coat that resists rust and gives each blade a slightly individual character. As a hand-forged carbon-steel blade, dry it after washing and avoid the dishwasher; minor surface marks are part of the finish, not a defect.
